Medina del Encinar cheese

Production: Medina del Encinar cheese, a pure-sheep's milk cheese from the region of Castilla y León, is made through rigorously traditional methods; it is the result of a painstaking selection of milk obtained from sheep that graze in the best pastures. Made from 100% unpasteurized pure sheep's milk, the result is a gourmet cheese with an original, exquisite taste and aroma. During an ageing process lasting no less than eight months, the cheese is treated with pure olive oil. The final product is a cheese of intense colour and the smooth taste of sheep's milk.
